Hue royal cuisine (am thuc cung dinh Hue) — the most complex and visually elaborate of Vietnam’s regional cuisines, derived from the Nguyen court kitchens — is presented at its most formal at the royal cuisine restaurants on the Citadel’s east side. The festival adds street food versions of the court dishes alongside the sit-down restaurant experience: bun bo Hue (the city’s spicy beef noodle soup), banh khoai (crispy rice pancakes), and the 50-plus small dishes of a full royal cuisine set meal. April’s warm evenings are ideal for a riverside royal cuisine dinner.

Tu Duc Mausoleum

April’s Tu Duc Mausoleum is in its last dry-season best condition before the summer heat and occasional showers arrive. The pine forest paths and lotus lake are at their spring prime; the hot air balloon festival (if it falls in April) sometimes includes a pass over the mausoleum area from the launch site north of the city — an aerial view of the royal tomb complex that is otherwise unavailable.
